Executive Director Towle reported that Donella Westphal, owner of Jules Bistro, is ending food service at the airport due to staffing and scheduling challenges, despite being a strong partner. In response, the airport plans to explore whether any other providers are interested in offering food service, and in the interim will work with Bernick’s, the current snacks and soda vendor, to identify potential stopgap solutions. This creates a clear need to replace or reconfigure concessions offerings in the terminal.This is a meaningful opportunity for food and beverage operators, vending and micro-market providers, and hospitality management firms to propose service models tailored to variable flight schedules and security constraints. Vendors can approach the airport with ideas such as limited-service cafes, grab-and-go concepts, local brand partnerships, or enhanced vending, emphasizing flexible staffing, revenue-sharing, and customer experience improvements for both passengers and event attendees like air show spectators.

The airport must accommodate irregular flight schedules and may also support special events like the North Star Air Show, affecting concessions needs.
